Prawns marinaded in lemon, cooked on the BBQ and served with a mint pesto make a delicious summer's day BBQ dish.
BBQ season is finally here in our house! The prawns in our supermarket are often the size of a small fist and are a regular on our bbq. This dish has a lemon marinade and the mint pesto really compliments this. I cook this on the BBQ, but you could do this on the stove via a griddle pan/frying pan too. I think the mint pesto would be lovely with roasted/grilled veggies too. Marinade, cook, eat and enjoy!
Large prawns are not a necessity for this recipe and you could happily make it with more smaller prawns. If you are using smaller prawns then you may want to put them on a skewer to stop the prawns falling through the BBQ grill. If that happens in our house, the Chief Taster will let out a scream so loud, it can be heard streets away!
Prawns in a Lemon Marinade with Mint Pesto
Ingredients
- 6 Tiger prawns peeled & deveined
- 1 Lemon juice
- 1 bunch Fresh mint chopped
- 1 garlic clove chopped
Marinade
- 1 garlic clove chopped
- 6 tablespoons Fresh mint chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon creme fraiche / sour cream
- 1 tablespoon Parmesan Cheese
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Place the prawns in a dish and cover with the lemon juice, mint and garlic. Coat well, cover and marinade for 30 minutes.
- Put all the ingredients for the pesto in a blender/processor and blitz until smooth. Season with salt and pepper to taste.
- Heat up the bbq and cook the prawns on a medium heat for 2-3 minutes on each side until cooked through.
- Serve with the mint pesto on the side.
- Eat and enjoy!
