Chicken Zucchini Meatballs

Moist and healthy chicken meatballs made with zucchini and flavoured with herbs make a great dinner or low carb snack.  They are keto, grain free, paleo and Whole 30.

These chicken meatballs are easy to make and you can add your own herbs and spices to them.  The zucchini helps bind the mixture without the need for an egg or flour.  It also keeps the meatballs moist as well as another way of sneaking vegetables into your food.

Chicken Zucchini Meatballs

Ground chicken and grated zucchini make easy low carb meatballs

Ingredients

  • 1 lb chicken, ground
  • 1 medium zucchini grated
  • 3 spring onions chopped
  • 1 tablespoon thyme chopped or dried
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Preheat the oven to 200C/400F degrees
  • Mix all of the ingredients in a bowl and blend well.
  • Using clean damp hands form large walnut sized balls with the chicken mixture.
  • Place the balls on a parchment lined baking tray.
  • Bake for 25-30 minutes until firm and golden.
  • Eat and enjoy!
