Cheesy Cabbage Casserole

This cheesy cabbage casserole can be enjoyed as a side dish or a main dish. Layers of cabbage, cheese sauce and nuts are baked until golden for an easy comfort food recipe.

If you enjoy cheese and cabbage, this is the dish for you! With half a head of cabbage, a selection of cheeses you have a tasty dish.

Many many years ago, I used to make this dish but with a cheese bechamel sauce. This was easy to make into a low carb dish but using a keto cheese sauce. We both love cabbage and to pour a cheese sauce over it is just divine to us. Add some nuts for a little extra taste and voila!

Ingredients

The great thing about this baked cabbage dish is that the ingredients are cheap and cheerful! We add nuts to this dish which can be omitted.

  • Cabbage - Choose fresh, crisp cabbage for the best results. Green cabbage is commonly used, but you can also use Napa or Savoy cabbage for a slightly different flavor.
  • Cheddar cheese - this can be substituted with other firm cheeses.
  • Parmesan cheese - freshly grated Parmesan cheese has a great flavor.
  • Cream cheese - for the base of the cheese sauce.
  • Cream - heavy or whipping cream
  • Peanuts - we add salted peanuts to this dish which can either be omitted for a nut free dish or other low carb nuts such as walnuts used. Roasted peanuts could be used too.

How to make cheesy cabbage casserole.

The cabbage is blanched to soften it before making the casserole.

Layering is essential for even distribution of flavors. Start with a layer of cabbage, followed by a layer of cheese, and then repeat. This ensures that each bite has a good mix of cabbage and cheese.

Layer the cheese sauce and peanuts on top of the cabbage.

Repeat the layers, top with cheese and baked until golden.

Storage and Freezing

Keep any leftovers in the fridge, in an air tight container. It will last up for 2 to 3 days.

This can be frozen but allow the casserole to cool completely before freezing. This helps prevent condensation inside the container, which can lead to freezer burn.

Consider portioning the casserole into serving-sized portions. This makes it easier to thaw and reheat only the amount you need.

When you're ready to enjoy the cheesy cabbage casserole, transfer the frozen portion to the refrigerator and allow it to thaw overnight. Thawing in the refrigerator helps maintain the texture and flavor.

It's important to note that while freezing can preserve the dish, some changes in texture may occur. Cabbage, in particular, can become somewhat softer when frozen and reheated. However, the flavors should still be delicious, and it can be a convenient way to enjoy leftovers or make-ahead meals.

Recipe Tips

Don't forget to season your casserole well. Common seasonings include salt, black pepper, garlic powder and paprika. You can also add herbs like thyme or parsley for extra flavor.

If you want to add some protein to your casserole, consider mixing in cooked ground beef, sausage, or bacon. This adds a meaty element to the dish.

Ingredients

  • ½ head cabbage
  • 2 oz butter
  • 8 oz Heavy Cream
  • 4 oz cream cheese
  • 4 oz Parmesan cheese, grated
  • 8 oz Cheddar cheese, grated
  • 4 oz peanuts
  • ½ teaspoon white pepper
  • 1 teaspoon salt

Instructions

  • Preheat the oven to 180C/350F degrees.

Prepare the cabbage

  • Start by washing and slicing the cabbage with a sharp knife.
  • Blanch the cabbage in boiling water for a few minutes to soften it slightly before adding it to the casserole. Drain and set aside.

Make the cheese sauce

  • In a medium saucepan, add the cream, cream cheese and butter and melt on a low heat.
  • Add in 4oz of the Cheddar cheese and stir until it has melted. Season with salt and pepper to taste.

Assembly

  • Place half of the cabbage in the bottom of a 9 x 13 inch casserole dish.
  • Spoon half of the cheese sauce over the cabbage and scatter the peanuts on top.
  • Sprinkle half of the Parmesan cheese on top and repeat the layers.
  • Top with the remaining Cheddar cheese and bake in the oven for 15-20 minutes until the top is golden.
